Smashed avocado on rye with lime and chilli

This is a simple but oh so tasty breakfast, lunch, dinner and everything in between. Avocados are extremely nutrient rich and help to lower LDL cholesterol but raise HDL cholesterol. The lime will help to lower your blood sugar levels and help with inflammation. Rye pumpernickel bread is wheat and yeast free, filling and very delicious!

Serves 2

Ingredients

2 slices rye bread like Biona, we like the hemp seed one

1 large ripe avocado, organic and from a sustainable source

Extra virgin olive oil

Salt and pepper, to taste

1 – 2 limes

Chilli flakes

Pumpkin seeds (optional)

Method
  1. Start by mashing your avocado – not too much, it’s nice to have a bit of texture.

  2. Add salt and pepper to taste, a tablespoon of olive oil, squeeze in most of your lime.

  3. Toast your bread then drizzle a little olive oil over before spooning on your avocado.

  4. Sprinkle your chilli flakes on top along with your pumpkin seeds if using, another squeeze of lime and a drizzle of oil.
