Lambs lettuce or watercress

1 or 2 courgettes

Toasted pine nuts

Lime juice

Salt and pepper

Method
  1. If you have a spiralizer choose the setting to make wide, curled tendrils. If no spiralizer just use a peeler to make long strips.

  2. Place into a bowl along with the lambs lettuce or watercress, lime juice, salt and pepper and olive oil. Give it a toss and a massage.

  3. Cut your avocado in half and carefully extract the stone. Make long slices then use a spoon to scoop the flesh into your bowl. Give it another toss.

  4. Break up your mackerel into large-ish chunks.

  5. Choose your plates or platter and intertwine your salad and fish.

  6. Sprinkle over the pine nuts. Add another drizzle of oil and a final squeeze of lime.
