Mackerel is a tasty choice to up your intake of selenium. Selenium is a powerful antioxidant that fights oxidative stress – meaning an imbalance of free radicals and antioxidants in your body – and helps defend your body from chronic conditions such a heart disease and cancer.

Ingredients
Pack of peppered mackerel, from sustainable sources
1 large ripe avocado
Lambs lettuce or watercress
1 or 2 courgettes
Toasted pine nuts
Lime juice
Salt and pepper
Olive oil
Method

If you have a spiralizer choose the setting to make wide, curled tendrils. If no spiralizer just use a peeler to make long strips.

Place into a bowl along with the lambs lettuce or watercress, lime juice, salt and pepper and olive oil. Give it a toss and a massage.

Cut your avocado in half and carefully extract the stone. Make long slices then use a spoon to scoop the flesh into your bowl. Give it another toss.

Break up your mackerel into large-ish chunks.

Choose your plates or platter and intertwine your salad and fish.

Sprinkle over the pine nuts. Add another drizzle of oil and a final squeeze of lime.
