Roast figs with honey, walnuts and ricotta

A great starter for a dinner party or as part of a medley of dishes… or even a pudding! Figs are one of those fruits which remind us of Summer, they go well with cheese, in a salad or just on their own. Figs are a little superfood which are under-celebrated, but we should make the most of them in the summer months when they are at their best.

Serves 6

Ingredients

18 small fresh black figs, stems trimmed

1 tub of ricotta cheese

6 teaspoons honey

Pepper, to taste

Chopped walnuts

Thyme sprigs (optional)

Bag of rocket leaves

1 unwaxed lemon, juice and zest

Method
  1. Arrange the rocket leaves on a platter of individual plates.

  2. Cut a deep "X" into the top of each fig as if quartering it, being careful not to cut all the way through.

  3. Using a spoon, fill each fig with some of the ricotta.

  4. Transfer to the platter and drizzle with the honey.

  5. Sprinkle some pepper and a drizzle of olive oil.

  6. Scatter over the walnuts, lemon zest and juice.

  7. Add the thyme leaves on top of the figs to finish.
