Goats cheese has good levels of Vitamin K2 and a powerful combination of calcium, phosphorus and copper which help keep bones healthy. It provides healthy fats which can improve satiety and benefit weight loss. You can use any bread you like, we just have a strong love affair with sourdough.
Ingredients
½ loaf of sourdough, sliced and cut in half
Extra virgin olive oil
2 soft goat cheese logs
10 fresh figs
2 tablespoons honey
Handful chopped walnuts
salt
pepper
Method

Heat your oven to 200C.

Brush the bread slices with olive oil, season with salt and pepper.

Place on a baking tray in the oven for about 5- 10 minutes, or until just starting to toast. Remove from oven.

Crumble goat cheese on your sourdough. Top each with a few slices of figs, then drizzle with honey and chopped nuts.

Season lightly with fresh cracked pepper and a final drizzle of oil. Delicious as a light lunch or starter.
