Blueberry Smoothie

Make this smoothie for breakfast and take it on the go. It will be filling, refreshing and easy to get your nutrients in if you are tight for time. Have some frozen berries and bananas mean you’ll have your main ingredients to hand. Bananas will help to top up your potassium levels and a handful of spinach will boost your iron and Vitamin E.

Serves 2

Ingredients

300ml oat milk or milk of your choice

1.5 cups of frozen blueberries

2 frozen bananas (slice and freeze them in batches to make life easier)

2 large tbsp favourite nut butter

2 large handfuls of spinach

Handful of ice cubes

Method
  1. Pop all your ingredients into a blender and blend until smooth.

  2. Add a little extra milk or water to adjust the consistency.

  3. Scrape down the sides and blend again.

  4. Store in the fridge, covered, for up to 2 days.

  5. Shake or stir to mix.
